Today I'm sharing with you one of my favourite recipes, Prawn Linguine.
This was my go-to meal whilst at university, it was so quick, full of fresh flavours, very delicious and super filling too.
When Inghams got in touch asking me to share a recipe from one of their gorgeous Lakes & Mountains holiday destinations for their 'Foodie Finds' campaign, I saw Italy on the list and knew exactly what I'd make.
Prawn Linguine Recipe
Serves 2
King Prawns (I buy them already cooked)
Linguine
1 Medium Sized Tomatoes
1 Pepper (Not Green, Needs to be sweet!)
4 Spring Onions
Garlic
Lime
Salt
Pepper
Chilli (optional)
1. Wash your vegetables. Dice the tomatoes, pepper and spring onions and put into a bowl. Crush a clove of garlic, a pinch of salt and pepper and a big squeeze of the lime and mix together to cover the vegetables. I also add about a shot of water at this point, as it can be a bit dry without, but it's not a 'sauce' so don't go overboard!
2. Put your linguine in to a pan of boiling water, stirring occasionally.
3. Just before your pasta is done, toss your big bright bowl of veg into a pan with a little bit of oil and heat it all through. The veg should start to soften, if the liquid looks like it's drying up then add a dash of water with a little extra salt, pepper and lime to keep the flavour.
4. Once your pasta is done, take it off the heat. Add your cooked prawns to the veg, so they heat through. Whilst they cook, drain your pasta.
5. Take your veg and prawns off the heat and serve!
and there you go! A delicious, fresh and easy Prawn Linguine recipe!
It's perfect for just a quick dinner at home or even perfect for entertaining at a dinner party.

It's exactly one month until I jet off to Greece for a week with my Mr & his family. I'm not sure how I feel about saying I want a 'beach body' as such, any body is a beach body if you want it to be, but I do want to feel just that little bit more confident on the beach. So this month I want to work extra hard to feel that little bit more toned come September!
Now this motivation seems to come to me at 11:30pm when a full on workout isn't the most practical thing to be doing. By the time I've woken up in the morning all motivation has left the room and the thought of a workout makes me want to shed a few tears...
There are a few things I do to get myself back in the right head space, the first thing is hit up blogs and YouTube. These are my Top 4 Bloggers/YouTubers who inspire me to get on track!

Carly Rowena - I've written a mahoosive post on Carly before, but she is the number 1 person I'll go to when I need a little motivation. So many different workouts, healthy snack ideas even some fitness fashion thrown in too. It's all done with a huge smile, her positivity is infectious!
Lydia Elise Millen - Not only is she so lovely, she has an incredible attitude towards life, being happy and staying healthy. I loved her recent posts '3 Steps To Living Well' and 'Staying Motivated For Summer'. A scroll through her instagram is enough to get me feeling like I should put the box in cookies back in the cupboard...
The Londoner - Okay, okay, okay, so Rosie is not exactly a health & fitness blogger and, yes, you'll have to avoid the burgers oozing with cheese, slutty brownies and glasses of champagne, but I absolutely love her idea of the 80/20 diet or The Anti Diet, which means you should eat well 80% of the time and treat yourself 20% of the time! You can see that post for yourself here. Plus she has an incredible figure & her legs go on for days, so if that's not gym-spiration, what is?!
Niomi Smart - I'll go to Niomi's blog or YouTube if I'm looking for some great meal or snack ideas. Her recent 'What I Eat In a Day' videos are so helpful for new recipes!

Time for this months instalment of Happy & Healthy!
FINDING THE TIME - This is my main problem at the moment, I'm just so busy. With it being exam time in my second year of university, the load is pretty heavy and I'm struggling to keep up the blog and youtube routine and finding the time to work out. Every time I sit down to write a blog post or get ready for the gym, I feel like I should stay at home and write another chunk of my essay instead. Also it's way too easy to sit and pig out when you're stressing about the cultural relevance of an album pre 1970 (Yes, that's my life right now). That aside, I've been going to the gym at least once a week for the past few weeks and I'm planning to cane it during June when university has finished and I'm still in Brighton! MUSIC TO MOTIVATE - I'm currently obsessed with Kygo. His remixes transport me to a hot, sandy beach, sipping a cocktail, eating fresh fruit, wearing a neon bikini and some duo-chorme shades (it's a very detailed images going on here...) and it keeps me so motivated. Some of my favourites are I See Fire, Sexual Healing and No Diggity, check them out of YouTube, it'll either get you up and going or can be mega relaxing too.
GMYSPO - Lydia Elise Millen! Not only does she have the most to die for blog, she has one hot bod and she works very hard to maintain that. Her instagram snaps in her bedroom mirror are enough to get me in the gym, let alone her motivational posts with photos, tips and tricks. Have a snoop on her blog here.
SMOOTHIE - As the sun has started making more of an appearance I've got back into making smoothies for breakfast. I've been dreaming about the one I made this morning all day, Mango & Strawberry - recipe will be in a blog post!
CROSS TRAINER - I've never been a runner. I just can't break through 'the wall' to keep going and it's actually recommended that people with hyper-mobility do less 'high impact' sports to reduce strain. I wanted to shake things up a bit, so I tried out the Cross Trainer and i love it! I can do it for a long time, I can really feel it working, it gets my heart rate going and I don't feel any strain in my silly bendy joints!

I hadn't really found any YouTubers that I could relate to when it came to health and fitness. Some I watched and felt completely overwhelmed, some cooked with ingredients that would soak up my student budget in one hit and some I found a little too serious for my liking.
A few months ago I joined the gym and it was around the same time that I discovered Carly's videos. In fact the first day I went, I watched a video where she mentioned that it's okay to feel like a giant penis whilst doing your gym induction. Feeling a little nervous, it was just what I needed to hear, so I stood proud, feeling like a giant willy!
Her videos are informative, fun, colourful and some of them can be pretty hilarious. 'Alternative Uses for Tampons & Pads' with Hollie Wakeham had my housemate and I in tears! Workout routines, 30 Day Challenges, food diaries, meal ideas, fitness tags, workout wardrobes - everything you could want from a fitness guru really! She's a personal trainer, so really does know what she is talking about, but it doesn't come across in a patronising way in the slightest.

Now I'm home, I want to get in the kitchen!
I'm not a massive fan of cooking (more so baking...) in the kitchen in my shared student house. It never feels completely clean and I just don't feel inspired to taste new flavours and try new things in there. So whilst I'm at home I'm going to make the most of it!

Banana Bread, I've been having cravings for it recently so I need to fulfil those.

So I've been totally M.I.A recently, I'm sorry! Life's been pretty hectic and university work has just built up a little. I'm off for easter in two weeks, so I shall spend my time blogging and hopefully basking in spring sunshine!
With a little time to spare, I thought I'd share my latest fitness wants! I'm really into going to the gym at the moment so I want a little gym-drobe update. These things have really caught my eye! In the words of my darling boyfriend 'You're working out, it's not a fashion show'... True, buuuuut who doesn't want to feel good whilst they work out? Certainly not me, so out with boring, simple greys and blacks, in with some neons and pops of colour!
Lorna Jane Phone Holder from Active In Style - I'm always unsure of where to put my phone when I work out. If I put it on the gym machines I worried I'll yank the headphones, it'll fall on the floor and smash the screen into a million pieces and and iPhone six is a liiiitle to big to go down the bra! This may be my solution!
Nike Pro Classic Gym Bra in Neon Yellow from ASOS - I love having a flash of neon in a workout outfit. I think this is down to associating working out with summer and neons with summer - you know, summer body and all that. Workout clothes can be quite plain so I like to shake things up a bit with a splash of colour!
Yoga Tights from H&M - I absolutely love H&M sportswear, it's comfy, affordable and looks great. I have a very similar pair of trousers to these but they're wide leg, so I'd really like to have a pair like this too!
Active Cross Back Sports Bra in Mint from Missguided - Just. Look. At. It. It's so pretty! I love the detailing on the back and the colour is gorgeous.
Believe, Achieve Sports Vest in White from New Look - I like to wear a longer, slightly baggy over the top of a sports bra so this one is perfect. I love the little motivational words on it too... always helps!

1. Write a blog post at least once a week.
This one might be a little hard to keep to every single week, especially around assessment time at university, but I want to try my best to write a blog post every week. Even if it's just a little one. My blog is a happy place and I love the feeling of publishing a blog post I'm proud of.
2. Song write more and learn more songs on the piano.
Seeing as I'm studying a Professional Musicianship degree this one should be something I already do... but when you study it every day, it's not always what you want to do when you get home.
3. Start vlogging.
I have have have to do this. I wanted to start last summer, but 'conveniently' never got round to it. The new year couldn't be a better time to start so I have no excuse. Lack of confidence can do one, it's time do do what makes me happy! I will aim for at least one vlog a month!
4. Be Happy, Confident, Healthy and Positive.
This is an important one. I'm not saying I'm miserable, shy, unhealthy (although my new christmas food baby might disagree...) and negative at the moment, but I do have my down moments and that is something I want to try and get rid of!
5. Be more proactive and organised!
I need to stop lying on my bed scrolling through blogs/twitter/tumblr/facebook for hours when I should be doing house hold chores or more importantly working. On paper, I'm organised, Lists galore! But in reality, I'm super lazy and I need to actually start doing what's on my To Do List!

A week and half, I know, but I started on a Wednesday. I will continue as Monday to Sunday after this! This post was inspired by Cider With Rosie. Her blog is beautiful and I can't stop myself once I start reading, Go and have a look for yourself!

1. Coming home from an incredible month long road-trip around America. It was an unforgettable holiday with my family but I was so happy to get home to see my Mumma and big brother again!
2. After 34 days apart, I have finally been reunited with my boyfriend. I've never been so happy to see him!
3. Having to start thinking about autumn/winter clothing. I can't get enough of knitted jumpers, chunky scarves and warm hats so I can't wait to get layering again!
4. I've started buying things and making lists for things I need in my new bedroom in my student house! Now September is here, moving day is getting closer and closer... eek!

10. Seeing 'This Is Us' One Direction's film... in 3D (just picture it... Harry Styles in 3D... yes it is THAT good!) in Leicester Square with two of my best friends after a great day in London. Also, the fact that I am still listening to 'Best Song Ever' at least five times a day & I still think it is, indeed, the best song ever and shall remain so for a long time.
This weekend I also saw Lucy Blackwell, Live, at Sun Scream Festival at Thorpe park. Nothing better than seeing one of your best friends doing something they absolutely love! A great day with lovely people and lots of ride inflicted eye watering! This day will also be the feature of my first ever vlog, so keep your eyes peeled for that!
