Pancake day, an excuse to break all healthy eating rules and have pancakes for breakfast, lunch and dinner, right?

It's a Jamie Oliver recipe and it's absolutely fail safe.
I'm strictly a lemon and sugar gal when it comes to crêpes, but with thick pancakes I like to change up my toppings - my favourites are Nutella and fresh fruit or Maple Syrup and Bacon.
Ingredients
Serves 3-4 people
3 large free range eggs
115g plain flour
1 heaped teaspoon baking powder
140ml milk
pinch of salt
lemon/sugar/nutella/fruit/syrup/yoghurt - whatever your desired toppings are!
1. Separate your egg whites and yolks into two separate bowls.
2. Add the flour, baking powder and milk to the yolks and mix to make a smooth, thick batter.
3. Whisk the whites (much quicker to use an electric whisk) with a pinch of salt until they form stiff peaks.
4. Fold the egg whites into your batter - the mixture should almost double in size and look light and airy with lots of air bubbles.
5. Pop a non-stick frying pan with a dash of oil onto a medium heat. Use a ladle to pour a small test piece of batter into your pan.
6. Cook your pancakes for a few minutes on each side, once they start to firm up around the edges, they're ready to flip!
7. Once you've used up all the batter, go crazy with your toppings and devour the most delicious American pancakes you've ever had!
I've made this recipe so many times and it's never failed me. I'm hoping to master crêpes one day - much trickier in my opinion!

There's nothing better than pancakes for breakfast if you ask me.
I've gathered up some friends for fun and pancakes this morning.
I seriously cant wait to have my own cute little kitchen with all my cute little bits and bobs to style so lovely blog photos. But for now, Henry's student kitchen will have to do! (As far as student kitchens go, it's a gooden!)
What topping to go for?! Nutella, golden syrup, Lemon and sugar, strawberries, blueberries.. so many options! I think lemon and sugar has to be my favourite!

On a lazy, sunny morning in Brighton I want nothing more than brunch, consisting of a stack of pancakes drowning in syrup.
So that's what I got!
Myself, Hen and Garf took ourselves to Verano Lounge. One of my favourite little places in Brighton to grab a bite too eat.
Mismatching cushions and furniture in a big room with hundreds of paintings on the walls.
I love the uniqueness of this little place. It's not just like any other place, you can tell real effort has been put in.
Great for breakfast, lunch and dinner. Great for sipping on fruity and exciting cocktails, or for getting your foamy cappuccino to wake you up the morning after...
It took me a while to choose, I'm indecisive and it's a menu crammed with goodness. I wanted it all!
Milkshakes for everyone! Vanilla for Henry, Strawberry for Garf and Peanut Butter for myself. I'm one of those people who loves to mix sweet and salty and this milkshake hit the spoooottt. The men weren't such big fans...
The food's arrived!
Sweet, salty, soft and crunchy... so mouthwateringly good.
Okay, I'm a little bit late to the 'Bill's' party.
I'd heard so many people talk about how lovely it is there and how great the food is, although despite having one in Brighton, I'd never been, so Henry and I decided on one lazy saturday that we'd go there for a late lunch.
I knew as soon as I walked in that I would love the place. With all the bottles of wine and a rainbow of their jams, chutneys, drinks and other goodies stacked up to the ceiling as soon as you walk in.
Also, if somewhere has a recipe for Brownies scrawled across the wall in fancy handwriting, then I'm already sold!
Henry went for Bill's Beer Battered Cod with minted mushy peas, skinny fries and tartar sauce, which looked like a fabulous choice if you ask me!
Being an utter burger girl, I went for the Bill’s hamburger with a sesame seed bun, red onion, tomato, lettuce, horseradish mayonnaise, gherkins and skinny fries... and just because that wasn't quite enough I opted for Monterey Jack cheese too.
Put a gherkin in a burger and I'll be sold. Gherkin cravings all day, err'day. I'm weird, I know.
Look at me just loving life with my burger, I will definitely be ordering this again, but not before trying 'Halloumi and Hummus' a sesame seed bun with grilled halloumi, hummus, baby gem, roasted peppers, sweet chilli and yogurt, served with skinny fries. I think that sounds amazing!
I'll definitely be returning soon, possibly at breakfast time as I've the pancakes are to die for!

Valentines day was spent being super lazy, eating lots and watching films! Just thought I'd share a few photos from the day. They're not the greatest of photos, seriously bad natural light and I wasn't really focusing on getting great photos, just a few for the memories!
I woke up early to make us both pancakes. I totally cheated and bought a mix and, even then, still managed to fail miserably. They were edible and tasted fine, but look like pancakes they did not... I've decided I will master the art of pancake making in 2014!
My presents to Henry. Yes, it does look like I've done a weekly shop for him... But I decided to buy him some of this favourite things!

I think I'm still full from all the pizza... it was so good though!
As soppy as it is, Henry makes me super happy and I'm a very lucky girl!

But a very special Happy Valentines Day to my man, Henry.
So, we planned a day to Lewes for Valentines Day, maybe have some lunch at 'Bills' and then have a cosy night in. But when I woke up this morning, ready to go to get some ingredients to make some pancakes for breakfast, even just walking across the road to the shop left me absolutely soaked, so we decided we might have to venture to Lewes another day!
So it looks like a cosy day in for us. I think we should watch films and bake cookies and have a takeaway this evening, sounds like an ideal day to me!
